Arròs negre

El arròs negre es un plato típico de Cataluña y Valencia, en el que el arroz adopta este tono negruzco por la tinta de la sepia que se incluye en al receta. Se prepara de forma similar a la paella.  Hace mucho tiempo que tenía en mente hacer esta fiambrera pero no tenía muy claro si aguantaría bien el día después. Y la experiencia me ha enseñado que se conserva perfectamente uno o dos días en la nevera y que incluso congelado se mantiene bastante bien.  Un plato de Arròs negre y una ensalada supone una comida completa y equilibrada,si se acompaña con una pieza de fruta o un yogur. Un día de éstos os hablaré de mis soluciones para no morirme de hambre a mitad de mañana. Esta receta la propongo sin cantidades, ya que excepto la medida de arroz y agua., el resto va a gustos. Se puede substituir las sepietas por una sepia cortada a trozos y un sobre de tinta.

La receta: 
Arroz, el doble de medida de agua que de arroz, sepietas  (sepias pequeñas), 1 tomate maduro, trozos de rape, un pimiento verde, ajo, perejil, aceite, sal.
Se les quita la barca a las sepietas, manteniendo la bolsa de tinta.  Se añade un poco de aceite y se fríen las sepietas. El resultado, si se han mantenido las bolsas de tinta de las sepietas en su interior., es un sofrito completamente negro. Apartar en un bol. 
A parte, se hace un sofrito con el pimiento a trozos pequeños y el ajo y perejil. Una vez sofrito el pimiento, se añade el tomate rallado y se fríe hasta que haya perdido el agua. A este conjunto se le añade el sofrito de sepietas y el arroz. Se le da una vuelta para que el arroz se empape del sofrito y se añade el agua. A mitad de cocción se añaden los trozos de rape cortados en pequeños trozos. Se sala y se deja cocer hasta que el arroz esté en su punto, unos 12-15 minutos o hasta que el arroz esté al punto deseado.

The arròs negre is a typical dish from Catalonia and Valencia, which adopts this tone because of the cuttlefish ink included in the recipe. To prepare it, you can follow the same steps that in the paella recipe.  Long ago I had in mind to do this lunchbox but was not sure if it would be ok the day after. My experience is that can be perfectly preserved one or two days in the fridge and even frozen remains fairly well. A green salad and a arros negre can be a very good combination and a balanced meal, if accompanied with a piece of fruit or yogurt. One of these days I will speak of my solutions for the . The recipe doesn't include quantities, except  for rice and water. The small cuttlefish can be replaced by a big cuttlefish and squid ink (you can find it at the supermarket). .
The recipe:
Ingredients: 1/2 cup/person of rice, 1 cup/person of water, sepietas (small cuttlefish), 1 ripe tomato, chunks of monkfish, a green pepper, garlic, parsley, oil, salt.
Clean the small cuttlefish (in case of a big cuttlefish, cut into small pieces, saving the ink bag). Heat some of the oil in a large pan and lightly fry the cuttlefish over a slow heat so that it loses all its water. Remove from the pan. Using the same pan, add some more oil and cook the green pepper and garlic and parsley (chopped). Remove when it starts to change colour (no more than five minutes). Add grated tomato and let everything cook gently until the water evaporate. Put the cuttlefish back in the pan and add the rice. Cook and stir the mixture.Add the water, stirring well. Add small pieces of monkfish  to the mixture. Salted and cook for about 12 minutes, or until the rice has absorbed the liquid and is tender.
